For the Cake
- 1 ½ cups all-purpose flour
- ½ cup almond flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ cup unsalted butter, softened
- ¾ cup brown sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ tsp almond extract
- ½ cup milk
- 1 cup diced apples (peeled)
- ¾ cup chopped dates
- ¼ cup sliced or chopped almonds
For the Butter Sauce
- ½ cup unsalted butter
- ½ cup brown sugar
- ¼ cup heavy cream
- ½ tsp vanilla extract
- Pinch of salt
Instructions
1. Prepare the Cake Batter
- Preheat oven to 350°F (175°C).
- Grease an 8×8-inch baking dish or round cake pan.
- In a bowl, whisk flour, almond flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, cream butter and brown sugar until light and fluffy.
- Beat in eggs one at a time, then add vanilla and almond extract.
- Mix in dry ingredients alternately with milk until just combined.
- Fold in apples, dates, and almonds.
2. Bake
- Pour batter into prepared pan and smooth the top.
- Bake 35–40 minutes, until a toothpick inserted in the center comes out clean.
3. Make the Butter Sauce
- In a saucepan over medium heat, melt butter.
- Stir in brown sugar and cream.
- Simmer 4–5 minutes, stirring constantly until smooth and slightly thickened.
- Remove from heat and stir in vanilla and salt.
4. Serve
- Spoon warm butter sauce generously over slices of cake.
- Serve warm or at room temperature.
