Instructions
1️⃣ Prepare the Filling
In a bowl mix:
- Ricotta
- Basil
- Lemon zest & juice
- Garlic
- Parmesan
Stir until smooth and creamy.
2️⃣ Prepare the Salmon
- Place salmon fillets between plastic wrap and gently pound to even thickness.
- Season lightly with salt and pepper.
3️⃣ Assemble the Rolls
- Spread a layer of ricotta mixture over each fillet.
- Place 2–3 asparagus spears at one end.
- Roll the salmon tightly and secure with toothpicks if needed.
4️⃣ Bake
- Preheat oven to 375°F (190°C).
- Place rolls seam-side down in a baking dish.
- Drizzle with olive oil.
