For the Coleslaw

- 1 cup shredded purple cabbage (optional)
- 1 cup shredded carrots
- ½ to ¾ cup creamy coleslaw dressing
- 1 teaspoon Dijon mustard (optional)
- 1–2 teaspoons apple cider vinegar
- 1–2 teaspoons sugar (optional)
- Salt and pepper to taste
For the Wraps
- 6–8 large tortillas
- 1–2 cups shredded lettuce
- Red onion slices
- Pickle slices
- Extra BBQ sauce
- Optional: shredded cheese
Instructions
- Prepare the BBQ Chicken
- Add shredded chicken to a skillet.
- Stir in BBQ sauce and season with garlic powder, smoked paprika, onion powder, and black pepper.
- Add a splash of apple cider vinegar and a bit of brown sugar if desired.
- Warm over medium heat, stirring until heated through and evenly coated.
- Make the Coleslaw
- Combine shredded cabbage, purple cabbage, and carrots in a large bowl.
- In a separate bowl, whisk coleslaw dressing, Dijon mustard, vinegar, and sugar.
- Pour the dressing over the cabbage mix and toss until everything is coated.
- Season with salt and pepper and let rest for 5–10 minutes.
- Warm the Tortillas
- Warm tortillas in the microwave or in a dry skillet until soft and flexible.
- Assemble the Wraps
- Lay a warm tortilla flat.
- Add a strip of shredded lettuce in the center.
- Spoon BBQ chicken over the lettuce.
- Add a generous scoop of coleslaw.
- Top with red onion slices, pickles, and shredded cheese if using.
