For the Lime Cheesecake Filling

  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs, room temperature
  • ¼ cup sour cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons fresh lime juice
  • 1 tablespoon lime zest

For the Blackberry Swirl Topping

  • 1 cup fresh or frozen blackberries
  • 2 tablespoons granulated sugar
  • 1 tablespoon lime juice
  • 1 teaspoon cornstarch
  • 1 tablespoon water

Instructions

1️⃣ Prepare the Crust

  1. Preheat oven to 325°F (165°C).
  2. Line a 12-cup muffin pan with cupcake liners.
  3. Mix graham cracker crumbs, sugar, and melted butter.
  4. Press about 1 tablespoon of crust mixture into each liner.
  5. Bake for 5 minutes, then set aside.

2️⃣ Make the Blackberry Sauce

  1. In a small saucepan combine blackberries, sugar, and lime juice.
  2. Cook over medium heat for 5 minutes until berries soften.
  3. Mash slightly and strain if desired for smooth sauce.
  4. Let cool.

3️⃣ Prepare Cheesecake Filling

  1. Beat cream cheese and sugar until smooth.
  2. Add eggs one at a time, mixing gently.
  3. Mix in vanilla, lime zest, lime juice, and sour cream.

4️⃣ Fill the Cupcakes

  1. Spoon cheesecake filling over each crust.
  2. Add 1 teaspoon blackberry sauce on top.
  3. Use a toothpick to swirl the sauce into the batter.

5️⃣ Bake

Bake for 18–20 minutes until centers are set.

6️⃣ Chill

Cool at room temperature, then refrigerate for 2 hours before serving.
