For the Graham Cracker Crust

For the Lime Cheesecake Filling
- 16 oz cream cheese, softened
- ½ cup granulated sugar
- 2 large eggs, room temperature
- ¼ cup sour cream
- 1 teaspoon vanilla extract
- 2 tablespoons fresh lime juice
- 1 tablespoon lime zest
For the Blackberry Swirl Topping
- 1 cup fresh or frozen blackberries
- 2 tablespoons granulated sugar
- 1 tablespoon lime juice
- 1 teaspoon cornstarch
- 1 tablespoon water
Instructions
1️⃣ Prepare the Crust
- Preheat oven to 325°F (165°C).
- Line a 12-cup muffin pan with cupcake liners.
- Mix graham cracker crumbs, sugar, and melted butter.
- Press about 1 tablespoon of crust mixture into each liner.
- Bake for 5 minutes, then set aside.
2️⃣ Make the Blackberry Sauce
- In a small saucepan combine blackberries, sugar, and lime juice.
- Cook over medium heat for 5 minutes until berries soften.
- Mash slightly and strain if desired for smooth sauce.
- Let cool.
3️⃣ Prepare Cheesecake Filling
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing gently.
- Mix in vanilla, lime zest, lime juice, and sour cream.
4️⃣ Fill the Cupcakes
- Spoon cheesecake filling over each crust.
- Add 1 teaspoon blackberry sauce on top.
- Use a toothpick to swirl the sauce into the batter.
5️⃣ Bake
Bake for 18–20 minutes until centers are set.
6️⃣ Chill
Cool at room temperature, then refrigerate for 2 hours before serving.
