For the chicken roll-ups:

  • 4 large boneless, skinless chicken breasts (pounded thin or sliced into cutlets)
  • Salt and black pepper, to taste
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked or sweet paprika

For the broccoli cheddar filling:

  • 1 1/2 cups finely chopped broccoli florets (steamed or thawed and drained)
  • 1 1/2 cups shredded sharp cheddar cheese
  • 85115 g cream cheese (softened) or 3–4 tablespoons mayonnaise/sour cream
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste

Optional crispy coating:

  • 1 egg, beaten
  • 11 1/2 cups panko or breadcrumbs
  • 23 tablespoons melted butter or oil for drizzling

Instructions

  • Preheat your oven and lightly grease a baking dish.
  • Prepare the chicken:
    • Pound to an even thickness.
    • Season both sides with salt, pepper, garlic powder, and paprika.
  • Make the filling:
    • In a bowl, mix broccoli, cheddar, cream cheese (or mayo/sour cream), Dijon, garlic powder, onion powder, salt, and pepper.
    • Adjust seasoning to taste.
  • Assemble:
    • Lay chicken flat.
    • Spread a layer of broccoli cheddar filling over each piece.
    • Roll up tightly from the short end.
    • Place seam-side down and secure.
  • Coat (optional):
    • Dip each roll into beaten egg.
    • Roll in panko or crumbs.
    • Place in the baking dish and drizzle or mist with butter/oil.
