  • 2 tbsp olive oil or butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 5 cups broccoli florets
  • 3 cups vegetable or chicken broth
  • ½ cup crumbled feta cheese
  • ½ cup whole milk or cream (optional for extra richness)
  • ½ tsp dried oregano
  • ½ tsp black pepper
  • Salt to taste

For Garnish (Optional)

  • Extra feta
  • Olive oil drizzle
  • Fresh dill or parsley
  • Cracked black pepper

Instructions

1. Sauté the Aromatics

  1. Heat olive oil or butter in a pot over medium heat.
  2. Add onion and sauté 4–5 minutes until softened.
  3. Add garlic and cook 30 seconds until fragrant.

2. Simmer the Broccoli

  1. Add broccoli, oregano, broth, salt, and pepper.
  2. Bring to a simmer and cook 12–15 minutes, until broccoli is very tender.

3. Blend

  1. Add feta and blend using an immersion blender until smooth (or carefully transfer to a blender).
  2. Stir in milk or cream if using.
  3. Adjust seasoning as needed.
