For the Cake:

  • 1 box yellow cake mix (15.25 oz)
  • ¾ cup sour cream
  • ¾ cup vegetable oil
  • 3 large eggs
  • ⅓ cup milk
  • 1 tsp vanilla extract

For the Cinnamon Filling:

  • ¾ cup light brown sugar, packed
  • 1 tbsp ground cinnamon
  • 2 tbsp all-purpose flour

For the Crumble Topping:

  • ½ cup unsalted butter, melted
  • 1 cup all-purpose flour
  • ⅔ cup light brown sugar
  • 1 tbsp cinnamon
  • ½ tsp salt

Optional Glaze:

  • 1 cup powdered sugar
  • 12 tbsp milk or cream
  • ½ tsp vanilla extract

Instructions

1. Preheat Oven & Prepare Pan

  • Preheat oven to 350°F (175°C).
  • Grease a 9×13 inch baking dish or line with parchment paper.

2. Mix the Cake Batter

  • In a large bowl, beat together the cake mix, sour cream, oil, eggs, milk, and vanilla until smooth and fluffy (about 2 minutes).

3. Make the Cinnamon Filling

  • In a small bowl, mix together brown sugar, cinnamon, and flour. Set aside.

4. Layer the Batter & Filling

  • Pour half the cake batter into the pan.
  • Sprinkle all the cinnamon filling evenly over the batter.
  • Spread the remaining batter on top (a spatula helps smooth it out).

5. Make the Crumb Topping

  • In a bowl, stir together flour, brown sugar, cinnamon, and salt.
  • Add melted butter and mix until large crumbs form.
  • Sprinkle evenly over the cake.

6. Bake

  • Bake for 38–45 minutes, or until a toothpick inserted in the center comes out clean.

7. Cool & Glaze

  • Let the cake cool for 15–20 minutes.
  • Mix glaze ingredients and drizzle over the top before serving, if desired.
