For the Cake:
- 1 box yellow cake mix (15.25 oz)
- ¾ cup sour cream
- ¾ cup vegetable oil
- 3 large eggs
- ⅓ cup milk
- 1 tsp vanilla extract
For the Cinnamon Filling:
- ¾ cup light brown sugar, packed
- 1 tbsp ground cinnamon
- 2 tbsp all-purpose flour
For the Crumble Topping:
- ½ cup unsalted butter, melted
- 1 cup all-purpose flour
- ⅔ cup light brown sugar
- 1 tbsp cinnamon
- ½ tsp salt
Optional Glaze:
- 1 cup powdered sugar
- 1–2 tbsp milk or cream
- ½ tsp vanilla extract
Instructions
1. Preheat Oven & Prepare Pan
- Preheat oven to 350°F (175°C).
- Grease a 9×13 inch baking dish or line with parchment paper.
2. Mix the Cake Batter
- In a large bowl, beat together the cake mix, sour cream, oil, eggs, milk, and vanilla until smooth and fluffy (about 2 minutes).
3. Make the Cinnamon Filling
- In a small bowl, mix together brown sugar, cinnamon, and flour. Set aside.
4. Layer the Batter & Filling
- Pour half the cake batter into the pan.
- Sprinkle all the cinnamon filling evenly over the batter.
- Spread the remaining batter on top (a spatula helps smooth it out).
5. Make the Crumb Topping
- In a bowl, stir together flour, brown sugar, cinnamon, and salt.
- Add melted butter and mix until large crumbs form.
- Sprinkle evenly over the cake.
6. Bake
- Bake for 38–45 minutes, or until a toothpick inserted in the center comes out clean.
7. Cool & Glaze
- Let the cake cool for 15–20 minutes.
- Mix glaze ingredients and drizzle over the top before serving, if desired.
