This Caramel Mud Cake is a luscious twist on the classic mud cake — ultra-moist, dense, and infused with deep caramel flavor. Finished with a creamy caramel ganache or frosting, it’s perfect for celebrations or whenever you crave a decadent dessert.
Ingredients
For the Caramel Mud Cake
250g (1 cup) unsalted butter, chopped
200g (7 oz) white chocolate, chopped
1 cup brown sugar, packed
¾ cup sweetened condensed milk
¾ cup whole milk
1 tsp vanilla extract
2 large eggs, room temperature
1½ cups all-purpose flour
½ cup self-raising flour
¼ tsp salt
For the Caramel Ganache or Frosting
200g (7 oz) white chocolate, chopped
½ cup heavy cream
¼ cup thick caramel sauce (homemade or store-bought)
Optional: Sea salt flakes for garnish
Instructions
1. Preheat & Prep
- Preheat oven to 300°F (150°C).
- Grease and line a deep 8-inch round cake pan with parchment.
2. Make the Cake Base
- In a large saucepan over low heat, melt butter, white chocolate, brown sugar, condensed milk, and whole milk.
- Stir gently until smooth, then remove from heat and let cool slightly.
3. Add Vanilla & Eggs
- Stir in vanilla.
- Add eggs one at a time, whisking quickly to prevent curdling.
4. Add Dry Ingredients
- Sift in all-purpose flour, self-raising flour, and salt.
- Mix until just combined. Batter will be thick and glossy.
5. Bake
- Pour into prepared pan and smooth the top.
- Bake for 60–70 minutes or until a skewer comes out with moist crumbs.
- Let cool completely in the pan.

- Storage: Keeps well for 4–5 days in an airtight container.
- Freeze: Wrap slices tightly and freeze for up to 2 months.
- Salted Caramel Version: Add ½ tsp sea salt to the batter for contrast.
