Description

This Caramel Mud Cake is a luscious twist on the classic mud cake — ultra-moist, dense, and infused with deep caramel flavor. Finished with a creamy caramel ganache or frosting, it’s perfect for celebrations or whenever you crave a decadent dessert.

For the Caramel Mud Cake

  • 250g (1 cup) unsalted butter, chopped

  • 200g (7 oz) white chocolate, chopped

  • 1 cup brown sugar, packed

  • ¾ cup sweetened condensed milk

  • ¾ cup whole milk

  • 1 tsp vanilla extract

  • 2 large eggs, room temperature

  • 1½ cups all-purpose flour

  • ½ cup self-raising flour

  • ¼ tsp salt

For the Caramel Ganache or Frosting

  • 200g (7 oz) white chocolate, chopped

  • ½ cup heavy cream

  • ¼ cup thick caramel sauce (homemade or store-bought)

  • Optional: Sea salt flakes for garnish


Instructions

1. Preheat & Prep

  • Preheat oven to 300°F (150°C).
  • Grease and line a deep 8-inch round cake pan with parchment.

2. Make the Cake Base

  • In a large saucepan over low heat, melt butter, white chocolate, brown sugar, condensed milk, and whole milk.
  • Stir gently until smooth, then remove from heat and let cool slightly.

3. Add Vanilla & Eggs

  • Stir in vanilla.
  • Add eggs one at a time, whisking quickly to prevent curdling.

4. Add Dry Ingredients

  • Sift in all-purpose flour, self-raising flour, and salt.
  • Mix until just combined. Batter will be thick and glossy.

5. Bake

 

  • Pour into prepared pan and smooth the top.
  • Bake for 60–70 minutes or until a skewer comes out with moist crumbs.
  • Let cool completely in the pan.

Notes

  • Storage: Keeps well for 4–5 days in an airtight container.
  • Freeze: Wrap slices tightly and freeze for up to 2 months.
  • Salted Caramel Version: Add ½ tsp sea salt to the batter for contrast.
  • Layered Cake: Double the recipe and bake in two pans for a stacked version.
