Description
Cheesecake Fruit Salad Roll Ups combine the luscious creaminess of cheesecake with the bright, juicy pop of fresh fruit—all wrapped up in soft tortillas. These no-bake pinwheels are fun to assemble, easy to serve, and perfect for parties, lunchboxes, or sweet snacking. Think of it as a mashup between a fruit salad, cheesecake, and a dessert taco… and it works deliciously.
Ingredients
For the filling:
- 8 oz cream cheese, softened
- 1/3 cup powdered sugar
- 1/2 tsp vanilla extract
- 1/2 cup whipped topping or Greek yogurt (for a fluffier texture)
For assembly:
- 3–4 large flour tortillas
- 1 ½ cups chopped fresh fruit (strawberries, blueberries, kiwi, grapes, mango, etc.)
- Optional: drizzle of honey or mini chocolate chips
Instructions
- Make the cheesecake filling:
- In a bowl, beat cream cheese until smooth. Add powdered sugar and vanilla; mix until creamy. Fold in whipped topping or yogurt.
- Assemble the roll ups:
- Lay out tortillas and spread a generous layer of the cheesecake mixture across each one.
- Sprinkle evenly with chopped fruit. Don’t overfill—this helps them roll tightly.
- Roll and chill:
- Roll each tortilla tightly like a burrito. Wrap in plastic wrap and refrigerate for at least 30 minutes to firm up.
- Slice and serve:
- Unwrap and slice into pinwheels using a sharp knife. Serve immediately.
Notes
