- ½ tsp kosher salt
- ¼ tsp freshly ground black pepper
- 1 tbsp fresh lemon juice
- 2 tbsp parsley, minced
Cheese Blend
- 1 cup freshly shredded mozzarella
- ½ cup grated Parmesan
- Optional: 2 oz cream cheese (for extra richness)
Instructions
1. Prepare the Bread
- Preheat oven to 400°F (200°C).
- Arrange slices on a sheet tray.
- Lightly brush with olive oil.
- Toast 5–7 minutes until just beginning to crisp (prevents sogginess).
2. Cook the Shrimp
- Heat butter + olive oil over medium.
- Add garlic; cook 30 seconds (fragrant, not browned).
- Add shrimp, salt, pepper, red pepper flakes.
- Cook 2–3 minutes until just opaque.
- Remove from heat; stir in lemon juice and parsley.
- Roughly chop if needed for even topping distribution.
Avoid overcooking—the shrimp will cook again in the oven.
3. Assemble
- If using cream cheese, spread a thin layer on each toast.
- Top evenly with shrimp mixture.
- Sprinkle generously with mozzarella and Parmesan.
4. Bake
- Return to oven 6–8 minutes until cheese melts.
- Broil 1–2 minutes for golden bubbling surface.
