For the Crepes
- 1 cup all-purpose flour
- 2 large eggs
- 1 ¼ cups milk
- 2 tbsp melted butter
- Pinch of salt
For the Seafood Filling
- 1 cup cooked shrimp, chopped
- 1 cup crab meat (real or imitation)
- 2 tbsp butter
- 2 tbsp flour
- 1 cup milk
- 1 cup shredded mozzarella or cheddar cheese
- ¼ cup grated Parmesan
- 2 tbsp green onions, chopped
- 1 tsp garlic powder
- Salt and black pepper to taste
Instructions
1. Make the Crepes
- In a bowl, whisk flour, eggs, milk, melted butter, and salt until smooth.
- Heat a lightly greased skillet over medium heat.
- Pour a small amount of batter and swirl to coat pan thinly.
- Cook about 1 minute per side.
- Stack and set aside.
2. Prepare Filling
- Melt butter in a pan over medium heat.
- Stir in flour and cook 1 minute.
- Slowly whisk in milk to form a sauce.
- Add cheese, shrimp, crab, green onions, and seasoning.
- Cook until creamy and heated through.
3. Assemble
- Spoon filling across center of each crepe.
- Roll or fold closed.
- Place seam-side down in baking dish.
4. Bake
- Sprinkle extra cheese on top.
- Bake at 375°F (190°C) for 10–12 minutes until melted and bubbly.
5. Serve
- Garnish with parsley and serve warm.
