  • 1 ¼ cups milk
  • 2 tbsp melted butter

For the Seafood Filling

  • 1 cup cooked shrimp, chopped
  • 1 cup crab meat (real or imitation)
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup milk
  • 1 cup shredded mozzarella or cheddar cheese
  • ¼ cup grated Parmesan
  • 2 tbsp green onions, chopped
  • 1 tsp garlic powder
  • Salt and black pepper to taste

Instructions

1. Make the Crepes

  1. In a bowl, whisk flour, eggs, milk, melted butter, and salt until smooth.
  2. Heat a lightly greased skillet over medium heat.
  3. Pour a small amount of batter and swirl to coat pan thinly.
  4. Cook about 1 minute per side.
  5. Stack and set aside.

2. Prepare Filling

  1. Melt butter in a pan over medium heat.
  2. Stir in flour and cook 1 minute.
  3. Slowly whisk in milk to form a sauce.
  4. Add cheese, shrimp, crab, green onions, and seasoning.
  5. Cook until creamy and heated through.

3. Assemble

  1. Spoon filling across center of each crepe.
  2. Roll or fold closed.
  3. Place seam-side down in baking dish.

4. Bake

  • Sprinkle extra cheese on top.
  • Bake at 375°F (190°C) for 10–12 minutes until melted and bubbly.

5. Serve

  • Garnish with parsley and serve warm.
