For the Chicken Fajitas

  • 1 ½ lbs boneless, skinless chicken breasts, sliced into strips
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large onion, sliced

For the Fajita Seasoning

  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp ground cumin
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper

For Serving (Optional)

  • Warm flour or corn tortillas
  • Lime wedges
  • Fresh cilantro
  • Sour cream, salsa, or guacamole

Instructions

1. Season the Chicken

  • In a bowl, toss chicken strips with olive oil and all fajita seasoning until evenly coated.

2. Cook the Chicken

  1. Heat a large skillet or cast-iron pan over medium-high heat.
  2. Add chicken and cook 5–6 minutes, stirring occasionally, until cooked through and lightly browned.
  3. Remove chicken from the skillet and set aside.

3. Sauté the Vegetables

  1. In the same skillet, add bell peppers and onions.
  2. Cook 6–8 minutes until tender-crisp and slightly charred.

4. Combine & Finish

  • Return chicken to the pan.
  • Toss everything together and cook 2 minutes more.
  • Squeeze fresh lime juice over the fajitas if desired.

5. Serve

  • Spoon chicken and vegetables into warm tortillas.
  • Add your favorite toppings and serve immediately.
