For the Chicken Fajitas
- 1 ½ lbs boneless, skinless chicken breasts, sliced into strips
- 2 tbsp olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 large onion, sliced
For the Fajita Seasoning
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp ground cumin
- ½ tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ¼ tsp black pepper
For Serving (Optional)
- Warm flour or corn tortillas
- Lime wedges
- Fresh cilantro
- Sour cream, salsa, or guacamole
Instructions
1. Season the Chicken
- In a bowl, toss chicken strips with olive oil and all fajita seasoning until evenly coated.
2. Cook the Chicken
- Heat a large skillet or cast-iron pan over medium-high heat.
- Add chicken and cook 5–6 minutes, stirring occasionally, until cooked through and lightly browned.
- Remove chicken from the skillet and set aside.
3. Sauté the Vegetables
- In the same skillet, add bell peppers and onions.
- Cook 6–8 minutes until tender-crisp and slightly charred.
4. Combine & Finish
- Return chicken to the pan.
- Toss everything together and cook 2 minutes more.
- Squeeze fresh lime juice over the fajitas if desired.
5. Serve
- Spoon chicken and vegetables into warm tortillas.
- Add your favorite toppings and serve immediately.
