Description

This Chili Lime Chickpea Cauliflower Wrap is a fresh, zesty, and wholesome wrap that’s as satisfying as it is easy to make. Roasted chickpeas and cauliflower are tossed in a tangy chili-lime seasoning, then wrapped in soft tortillas with fresh greens and creamy sauce. Perfect for a quick lunch, light dinner, or meal prep, it’s a flavor-packed vegetarian (and easily vegan) recipe you’ll make again and again.

For the roasted chickpeas & cauliflower:

  • 1 cup canned chickpeas, drained & patted dry
  • 2 cups cauliflower florets
  • 2 tbsp olive oil
  • 1 1/2 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp cumin
  • Juice & zest of 1 lime
  • Salt & black pepper to taste

For the wrap assembly:

  • 4 soft tortillas or wraps
  • 1 cup shredded lettuce or baby spinach
  • 1/4 cup sliced red onion
  • 1/2 avocado, sliced (optional)
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving

Optional sauce (quick lime yogurt sauce):

  • 1/4 cup Greek yogurt or vegan yogurt
  • 1 tsp lime juice
  • Pinch of salt & chili powder

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Roast chickpeas & cauliflower:
    • Toss chickpeas and cauliflower with olive oil, chili powder, smoked paprika, cumin, lime juice, lime zest, salt, and pepper.
    • Spread on the baking sheet and roast for 20–25 minutes, shaking halfway through, until golden and slightly crispy.
  3. Make the sauce (optional):
    • Stir together yogurt, lime juice, salt, and chili powder in a small bowl.
  4. Assemble the wraps:
    • Warm tortillas, then layer with lettuce, roasted chickpeas & cauliflower, red onion, avocado, and cilantro. Drizzle with the sauce or add extra lime juice.
  5. Serve:
    • Fold or roll into wraps and serve immediately with lime wedges.
