    • 1 cup (2 sticks) unsalted butter, softened
    • 1 cup brown sugar, packed
    • ½ cup granulated sugar
    • 2 large eggs
    • 1 tsp vanilla extract
    • 2 ½ cups all-purpose flour
    • 1 tsp baking soda
    • ½ tsp salt
    • 1 ½ cups semisweet chocolate chips
  • For the cheesecake filling:
    • 16 oz cream cheese, softened
    • ½ cup granulated sugar
    • 2 large eggs
    • 1 tsp vanilla extract

Instructions

  1. Preheat oven: Set to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. Make the crust: In a bowl, cream butter, brown sugar, and granulated sugar until fluffy. Beat in eggs and vanilla. Mix in flour, baking soda, and salt. Stir in 1 cup of the chocolate chips.
  3. Press half the dough: Spread half the cookie dough evenly into the bottom of the pan.
  4. Prepare cheesecake filling: Beat cream cheese, sugar, eggs, and vanilla until smooth. Spread over the cookie dough layer.
  5. Top with remaining dough: Drop spoonfuls of the rest of the cookie dough over the cheesecake layer, gently spreading. Sprinkle remaining ½ cup chocolate chips on top.
  6. Bake: Bake for 35–40 minutes, or until golden brown and set in the center.
  7. Cool & chill: Let cool completely, then refrigerate for at least 2 hours before slicing into bars.
