- 2 tbsp mini chocolate chips
For the yogurt bark:
- 1 ½ cups plain or vanilla Greek yogurt (dairy-free if preferred)
- 2–3 tbsp maple syrup or honey (adjust to taste)
- 1/2 tsp vanilla extract
- 2 tbsp mini chocolate chips, for topping
- Crushed graham crackers or chopped nuts (optional, for texture)
Instructions
- Make the cookie dough:
- In a small bowl, mix softened butter, sugar, vanilla, and salt.
- Stir in almond flour until dough forms. Fold in chocolate chips. Set aside.
- Mix the yogurt base:
- In a medium bowl, stir together yogurt, maple syrup, and vanilla until smooth.
- Assemble the bark:
- Line a small baking sheet (8×8 or 9×9) with parchment paper.
- Spread the yogurt mixture evenly across the pan.
- Crumble the cookie dough over the top in small chunks. Sprinkle extra chocolate chips or toppings.
- Freeze:
- Freeze for at least 3–4 hours, or until firm.
- Slice & serve:
- Once fully set, break or cut into bark-style pieces. Store in a freezer-safe bag or container.
