Description
This Christmas Poke Cake is a festive, ultra-moist holiday dessert made with a fluffy cake base poked and soaked with creamy pudding, then topped with whipped topping and cheerful Christmas decorations.
Ingredients
For the Cake
- 1 box white or vanilla cake mix
- Ingredients listed on cake mix (eggs, oil, water)
For the Pudding Filling
- 2 boxes (3.4 oz each) instant vanilla or white chocolate pudding
- 3 cups cold milk
For the Topping
- 2 cups whipped topping (Cool Whip), thawed
- ½ cup red and green sprinkles
- Crushed candy canes, M&M’s, or holiday sprinkles (optional)
Optional Flavor Add-Ins
- ½ tsp peppermint extract
- ½ tsp almond extract
- Red and green gel food coloring (for pudding or topping)
Instructions
Step 1: Bake the Cake
– Prepare the cake mix according to package instructions
– Pour into a greased 9×13 pan
– Bake until a toothpick inserted in the center comes out clean
– Let the cake cool for about 15–20 minutes
Step 2: Poke the Holes
– Use the handle of a wooden spoon or a straw
– Poke holes evenly across the cake, spacing them about 1 inch apart
– Go deep, but don’t poke all the way through the bottom
Step 3: Prepare the Filling
– Dissolve each gelatin flavor separately in hot water
– Add cold water (slightly less than directed)
– Stir until fully dissolved
Step 4: Fill the Cake
– Carefully pour red gelatin into half the holes
– Pour green gelatin into the remaining holes
– Pour slowly to prevent colors from mixing
Step 5: Chill
– Refrigerate the cake for at least 2–3 hours
– This allows the filling to fully set
Step 6: Frost and Decorate
– Spread whipped topping evenly over the chilled cake
– Add festive decorations just before serving
