  • 3 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1 large orange, segmented
  • 1 large grapefruit, segmented (optional)
  • 1 cup shredded carrots
  • ½ red onion, thinly sliced
  • ½ cup fresh cilantro or parsley, chopped
  • ⅓ cup sliced almonds, pistachios, or sunflower seeds

For the Citrus Dressing

  • ¼ cup freshly squeezed orange juice
  • 2 tbsp lemon juice
  • 1 tbsp lime juice
  • 2 tbsp olive oil
  • 1 tbsp honey or maple syrup
  • ½ tsp Dijon mustard
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

1. Prepare the Salad Base

  1. In a large bowl, combine green cabbage, red cabbage, carrots, red onion, and fresh herbs.
  2. Add citrus segments carefully so they don’t break apart.

2. Make the Citrus Dressing
