- 4 cups cubed bread (stale or lightly toasted)
- 2 cups cooked turkey, shredded
- 1 cup dried cranberries
- 1 medium onion, diced
- 2 celery stalks, diced
- 2 eggs
- 1 cup chicken or turkey broth
- 2 tbsp butter or olive oil
- 1 tsp sage
- 1 tsp thyme
- 2 tbsp parsley
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (180°C).
- Sauté onion and celery in butter until soft.
- In a large bowl, combine bread, turkey, cranberries, herbs, and sautéed vegetables.
- Beat eggs with broth and pour over mixture. Stir gently.
- Form into 1–1½ inch balls and place on parchment-lined baking sheet.
- Bake for 18–25 minutes, until golden and firm.
- Serve warm with cranberry sauce or gravy.
