- 2 cups cooked chicken breast, shredded or diced
- 1/3 cup dried cranberries
- 1/4 cup celery, finely chopped
- 1/4 cup red onion, finely chopped
- 1/3 cup mayonnaise (or Greek yogurt for lighter option)
- 1 tbsp Dijon mustard
- 1 tbsp lemon juice
- Salt & black pepper, to taste
- 3–4 medium apples (Honeycrisp, Fuji, or Gala work well)
- Fresh parsley or pecans, for garnish (optional)
Instructions
- Prepare the chicken salad
- In a large bowl, combine chicken, cranberries, celery, and red onion.
- Mix the dressing
- In a small bowl, whisk together mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
- Combine
- Pour dressing over chicken mixture and toss until everything is evenly coated.
- Slice the apples
- Core the apples and slice them into 1/4-inch thick rounds.
- Assemble
- Spoon a small amount of chicken salad onto each apple slice.
- Garnish & serve
- Sprinkle with fresh parsley or chopped pecans, if desired. Serve immediately.
