Instructions
1. Sauté the Vegetables
- Heat butter and olive oil in a large pot over medium heat.
- Add onion, carrots, and celery; cook 5–7 minutes until softened.
- Add garlic and cook 1 minute more.
2. Build the Soup
- Add shredded chicken and stir to combine.
- Sprinkle flour over the mixture and stir for 1 minute.
- Pour in chicken broth, milk, and heavy cream.
- Add seasonings (salt, pepper, paprika, garlic powder).
- Bring to a gentle simmer.
3. Cook the Macaroni
- Add elbow macaroni to the pot.
- Simmer uncovered for 10–12 minutes, stirring occasionally until pasta is tender.
4. Add the Cheese
- Reduce heat to low.
- Stir in cheddar, Monterey Jack, and cream cheese.
- Continue stirring until fully melted and the soup becomes creamy.
5. Serve
