For the Chicken
- 2 large chicken breasts (halved horizontally to make 4 cutlets)
- 1 cup all-purpose flour
- 2 large eggs
- 1 cup Italian-style breadcrumbs
- ½ cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and black pepper to taste
- ½ cup vegetable oil (for frying)
For the Sandwich
- 4 sandwich buns (brioche or burger buns)
- 1 cup marinara sauce
- 4 slices mozzarella cheese
- 2 tbsp butter (for toasting buns)
- Fresh basil leaves (optional)
Instructions
1️⃣ Prepare the Chicken
- Season chicken cutlets with salt and pepper.
- Place flour in one bowl, beaten eggs in another, and breadcrumbs mixed with Parmesan, garlic powder, and Italian seasoning in a third bowl.
2️⃣ Bread the Chicken
- Coat each chicken piece in flour.
- Dip into beaten eggs.
- Press into breadcrumb mixture until fully coated.
3️⃣ Fry
- Heat vegetable oil in a skillet over medium heat.
- Fry chicken for 4–5 minutes per side until golden brown and cooked through.
4️⃣ Add Cheese
- Place mozzarella slices on hot chicken.
- Cover skillet for 1 minute to melt cheese.
5️⃣ Toast the Buns
Spread butter on buns and toast lightly in a skillet until golden.
6️⃣ Assemble
- Spread warm marinara sauce on bottom bun.
- Add crispy mozzarella chicken.
- Top with basil and the upper bun.
