For the Potato Bombs
- 3 large potatoes, peeled & cubed
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp garlic powder
- ¼ tsp smoked paprika (optional)
- 1 large egg
- ½ cup flour (plus more for shaping)
- 1 cup mozzarella or cheddar, cut into small cubes
For Frying
- Oil for deep or shallow frying
For Garlic Butter
- 3 tbsp butter, melted
- 1 clove garlic, minced
- 1 tbsp fresh parsley, chopped
- Pinch of salt
Instructions
1. Prepare the Potatoes
- Boil potatoes in salted water 10–12 minutes until fork-tender.
- Drain, mash, and let cool slightly.
2. Make the Dough
- Stir in salt, pepper, garlic powder, paprika, egg, and flour.
- Mix until a soft dough forms (add a bit more flour if too sticky).
3. Shape
- Scoop 1 tbsp dough, flatten, add a cheese cube, and seal completely.
- Roll into balls and lightly dust with flour.
4. Fry
- Heat oil to 350°F (175°C).
- Fry balls 3–4 minutes, until crisp and golden.
- Drain on paper towels.
5. Garlic Butter Finish
- Mix melted butter, garlic, parsley, and salt.
- Brush warm bombs generously before serving.
