These Easter Chocolate Birds Nest Cookies are adorable no-bake treats made with melted chocolate and crunchy noodles or cereal shaped into little nests, then topped with colorful candy eggs.

- 2½ cups chow mein noodles or crispy cereal
- 1 cup mini chocolate candy eggs or speckled candy eggs
Optional Flavor Add-Ins
- 2 tablespoons peanut butter for a richer chocolate flavor
- ¼ cup butterscotch chips for a sweeter variation
- ¼ cup shredded coconut for extra texture
- ¼ cup crushed pretzels for a sweet and salty twist
Instructions
1️⃣ Melt the Chocolate
- Place chocolate chips and coconut oil in a microwave-safe bowl.
- Heat in 30-second intervals, stirring until smooth and fully melted.
2️⃣ Mix with Noodles
- Add chow mein noodles to the melted chocolate.
- Gently stir until all noodles are coated.
3️⃣ Form the Nests
- Scoop small portions onto a parchment-lined baking sheet.
- Use the back of a spoon to create a small indentation in the center to form a nest shape.
4️⃣ Add Candy Eggs
Place 2–3 mini chocolate eggs in the center of each nest.
5️⃣ Let Them Set
Allow nests to set at room temperature or refrigerate for 20 minutes until firm.
