  • 1 bag (11 oz) butterscotch chips
  • ½ cup creamy peanut butter
  • 3 cups chow mein noodles
  • 1 cup salted peanuts (optional)

Chocolate Variation

  • 1 cup semi-sweet chocolate chips
  • 1 cup butterscotch chips
  • ½ cup peanut butter
  • 3 cups chow mein noodles

  • Mini marshmallows

Instructions

1. Melt the Chips

  1. In a microwave-safe bowl, melt butterscotch chips (and chocolate chips if using) in 30-second intervals, stirring between each until smooth.
  2. Stir in peanut butter until creamy and well blended.

2. Add the Crunch

  1. Fold in chow mein noodles and peanuts until evenly coated.
  2. Mix gently to avoid crushing the noodles too much.

3. Form the Haystacks

  1. Line a baking sheet with parchment.
  2. Drop spoonfuls of the mixture onto the sheet to form “haystacks.”

4. Chill
