Classic Butterscotch Haystacks
- 1 bag (11 oz) butterscotch chips
- ½ cup creamy peanut butter
- 3 cups chow mein noodles
- 1 cup salted peanuts (optional)
Chocolate Variation
- 1 cup semi-sweet chocolate chips
- 1 cup butterscotch chips
- ½ cup peanut butter
- 3 cups chow mein noodles
Optional Add-Ins
- Mini marshmallows
- Pretzel sticks (broken)

Instructions
1. Melt the Chips
- In a microwave-safe bowl, melt butterscotch chips (and chocolate chips if using) in 30-second intervals, stirring between each until smooth.
- Stir in peanut butter until creamy and well blended.
2. Add the Crunch
- Fold in chow mein noodles and peanuts until evenly coated.
- Mix gently to avoid crushing the noodles too much.
3. Form the Haystacks
- Line a baking sheet with parchment.
- Drop spoonfuls of the mixture onto the sheet to form “haystacks.”
4. Chill
- Refrigerate 15–20 minutes until firm.
5. Serve
- Store in an airtight container at room temperature or chilled.
