  • 2 lb potatoes, peeled and cut into ½-inch cubes or 20 oz frozen hash browns
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes (fire-roasted or with green chiles)
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 cup frozen corn kernels
  • 1 ½ cups shredded cheddar cheese (plus extra for topping)
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp smoked paprika (optional)
  • Salt & pepper, to taste
  • Garnishes:
    • Sliced jalapeños
    • Chopped green onions
    • Fresh cilantro leaves
    • Sour cream dollops

Instructions

  1. Layering:
    • Bottom layer: seasoned, browned meat + diced onion + garlic.
    • Middle layer: potatoes (or hash browns) + beans + corn.
    • Top layer: diced tomatoes + condensed soup (stirred to combine).
  2. Set heat & time:
    • Low: 6–7 hours
    • High: 3–4 hours
  3. Mid-cook check (optional):
    • Around halfway on Low, gently stir to ensure even heating—especially if using fresh potatoes.
  4. Add cheese:
    • In the final 15–20 minutes, sprinkle shredded cheese over the top. Close the lid until melted.
  5. Finish & garnish:
