These Garlic Parmesan Roasted Shrimp are juicy, flavorful, and incredibly easy—coated in garlic, butter, lemon, herbs, and shredded Parmesan, then roasted in the oven until tender. Perfect as a quick appetizer, protein for salads, or a weeknight dinner served with pasta, rice, or crusty bread.

- 1½ lb (700 g) large shrimp, peeled & deveined
- 2 tbsp olive oil
- 2 tbsp butter, melted
- 5–6 cloves garlic, minced/grated
- ½ cup finely grated parmesan, divided
- Zest of 1 lemon + lemon wedges
- 2 tbsp chopped parsley (optional)
Seasonings
- 1 tsp Italian seasoning
- ½ tsp paprika
- ½ tsp black pepper
- ½ tsp salt (adjust)
- ¼ tsp red pepper flakes (optional)
Instructions
- Preheat oven to 425°F / 220°C. Line a sheet pan with parchment/foil.
- Pat shrimp very dry and place in a mixing bowl.
- Add olive oil, melted butter, garlic, seasonings, and lemon zest. Toss well.
- Add most of the parmesan and toss again to coat.
- Spread shrimp in a single layer on the sheet pan.
- Roast 6–9 minutes until opaque and just firm.
- Optional: broil 30–60 seconds for extra color.
- Finish with lemon juice, parsley, and remaining parmesan. Serve hot.
Notes
- Do not overcook—shrimp cook quickly.
- Smoked paprika adds depth; swap for regular paprika if preferred.
