Ingredients

  • 12 oz spaghetti or linguine
  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp olive oil
  • 4 tbsp unsalted butter
  • 5 cloves garlic, minced
  • ½ tsp crushed red pepper flakes (optional)
  • ½ cup white wine (or chicken broth)
  • Juice of 1 lemon
  • ¼ cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • Salt and black pepper, to taste

Instructions

  1. Cook the pasta
    • Boil pasta in salted water according to package directions until al dente.
    • Reserve ½ cup of pasta water, then drain and set aside.
  2. Cook the shrimp
    • Heat olive oil and 2 tbsp butter in a large skillet over medium-high heat.
    • Season shrimp with salt and pepper.
    • Sauté 2–3 minutes per side until pink and cooked through. Remove and set aside.
  3. Make the garlic sauce
    • In the same skillet, melt remaining butter. Add minced garlic and red pepper flakes. Sauté 30 seconds until fragrant.
    • Pour in white wine (or broth) and simmer for 2–3 minutes to reduce slightly.
  4. Combine pasta and shrimp
    • Add cooked pasta to the skillet, tossing to coat in the garlic sauce.
    • Stir in lemon juice, Parmesan, and shrimp. Add a splash of reserved pasta water if needed for a silky sauce.
  5. Serve
    • Garnish with parsley and extra Parmesan. Serve immediately with garlic bread or a crisp salad.
