- 12 oz spaghetti or linguine
- 1 lb large shrimp, peeled and deveined
- 3 tbsp olive oil
- 4 tbsp unsalted butter
- 5 cloves garlic, minced
- ½ tsp crushed red pepper flakes (optional)
- ½ cup white wine (or chicken broth)
- Juice of 1 lemon
- ¼ cup grated Parmesan cheese
- 2 tbsp fresh parsley, chopped
- Salt and black pepper, to taste
Instructions
- Cook the pasta
- Boil pasta in salted water according to package directions until al dente.
- Reserve ½ cup of pasta water, then drain and set aside.
- Cook the shrimp
- Heat olive oil and 2 tbsp butter in a large skillet over medium-high heat.
- Season shrimp with salt and pepper.
- Sauté 2–3 minutes per side until pink and cooked through. Remove and set aside.
- Make the garlic sauce
- In the same skillet, melt remaining butter. Add minced garlic and red pepper flakes. Sauté 30 seconds until fragrant.
- Pour in white wine (or broth) and simmer for 2–3 minutes to reduce slightly.
- Combine pasta and shrimp
- Add cooked pasta to the skillet, tossing to coat in the garlic sauce.
- Stir in lemon juice, Parmesan, and shrimp. Add a splash of reserved pasta water if needed for a silky sauce.
- Serve
- Garnish with parsley and extra Parmesan. Serve immediately with garlic bread or a crisp salad.
