- 3 tbsp honey

Instructions
Step 1: Preheat the oven
- Set your oven to 400°F (200°C).
- Line a baking sheet or mini muffin tin with parchment paper.
Step 2: Prepare the puff pastry
- Roll out the puff pastry on a lightly floured surface.
- Cut into 2-inch squares using a knife or pastry cutter.
- Place squares into the cups of a mini muffin tin (or directly on a baking sheet if flat bites).
Step 3: Add the goat cheese
- Spoon about 1 teaspoon of goat cheese into the center of each pastry square.
- Make sure not to overfill to prevent overflow during baking.
Step 4: Brush with egg wash
- Beat 1 egg and lightly brush the edges of each pastry square.
- This helps create a golden, shiny finish.
Step 5: Bake
- Place in the oven and bake for 12–14 minutes, or until the pastry is puffed and golden brown.
Step 6: Finish with honey
- Remove from the oven and let cool for 2 minutes.
- Drizzle a small amount of honey over each bite.
Step 7: Garnish
- Sprinkle with fresh thyme or rosemary.
- Add a tiny pinch of flaky sea salt for balance.
