For the Cake:
- 2 cups all-purpose flour
- 1½ cups granulated sugar
- 1 tbsp lime zest (about 2 limes)
- ¾ cup unsalted butter, softened
- ½ cup sour cream
- ¾ cup fresh lime juice
- 4 large eggs
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- Green food coloring (optional)
For the Lime Glaze (optional):
- 1 cup powdered sugar
- 2–3 tbsp fresh lime juice
- 1 tsp lime zest
Instructions
1. Preheat & Prepare
- Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch pan or two 9-inch round pans.
2. Mix Dry Ingredients
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
3. Cream Butter & Sugar
- In a large bowl, beat butter, sugar, and lime zest until light and fluffy.
4. Add Eggs & Sour Cream
- Beat in eggs one at a time. Add sour cream and mix until smooth.
5. Add Lime Juice & Dry Mix
- Gradually add dry ingredients, alternating with lime juice. Mix until just combined. If desired, stir in green food coloring.
6. Bake
- Pour batter into prepared pan(s). Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
7. Cool & Glaze
- Let cake cool completely. Whisk glaze ingredients and drizzle over cake. Top with extra zest if desired.
