Description

For the Cake:

  • 2 cups all-purpose flour
  • 1½ cups granulated sugar
  • 1 tbsp lime zest (about 2 limes)
  • ¾ cup unsalted butter, softened
  • ½ cup sour cream
  • ¾ cup fresh lime juice
  • 4 large eggs
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • Green food coloring (optional)

For the Lime Glaze (optional):

  • 1 cup powdered sugar
  • 23 tbsp fresh lime juice
  • 1 tsp lime zest

Instructions

1. Preheat & Prepare

  • Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch pan or two 9-inch round pans.

2. Mix Dry Ingredients

  • In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

3. Cream Butter & Sugar

  • In a large bowl, beat butter, sugar, and lime zest until light and fluffy.

4. Add Eggs & Sour Cream

  • Beat in eggs one at a time. Add sour cream and mix until smooth.

5. Add Lime Juice & Dry Mix

  • Gradually add dry ingredients, alternating with lime juice. Mix until just combined. If desired, stir in green food coloring.

6. Bake

  • Pour batter into prepared pan(s). Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.

7. Cool & Glaze

  • Let cake cool completely. Whisk glaze ingredients and drizzle over cake. Top with extra zest if desired.
