- 1½ lbs boneless, skinless chicken thighs or breasts
- ½ cup pineapple juice
- ¼ cup soy sauce
- ¼ cup brown sugar
- 2 tbsp ketchup
- 1 tbsp rice vinegar
- 1 tbsp fresh ginger, grated
- 2 cloves garlic, minced
- 1 tbsp sesame oil
- ½ tsp black pepper
- Optional: pinch of red pepper flakes
For the Stack:
- 2 cups cooked white or jasmine rice
- 4 slices grilled pineapple
- 1 cup shredded cabbage or slaw mix
- ½ cup sliced green onions
- 1 tbsp toasted sesame seeds
- Fresh cilantro or parsley (optional garnish)
Instructions
1. Marinate the Chicken:
- Whisk all marinade ingredients together in a bowl.
- Add chicken, cover, and marinate in the fridge for 2–4 hours (or overnight for deeper flavor).
2. Grill the Chicken & Pineapple:
- Preheat grill or grill pan over medium-high heat.
- Remove chicken from marinade and grill 5–7 minutes per side, or until fully cooked (internal temp 165°F).
- Grill pineapple slices for 1–2 minutes per side until lightly caramelized.
3. Prepare the Rice & Slaw:
- Cook rice according to package instructions and keep warm.
- Toss shredded cabbage with a pinch of salt and sesame oil (or leave plain for crunch).
4. Build the Stack:
For each serving:
- Start with a base of rice
- Add a grilled pineapple slice
- Top with sliced grilled chicken
- Add a handful of slaw
- Sprinkle with green onions and sesame seeds
