For the Chicken

  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika (optional)

For the Honey Mustard Dressing

  • ¼ cup Dijon mustard
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar (or lemon juice)
  • Salt and pepper, to taste

For the Salad

  • 6 cups mixed greens (like romaine, arugula, spinach)
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • ½ cup shredded carrots
  • ¼ cup sliced almonds or toasted pecans (optional)
  • ¼ cup shredded cheddar or crumbled feta (optional)

Instructions

1. Make the Dressing

  • In a bowl or jar, whisk together Dijon mustard, honey, olive oil, vinegar, salt, and pepper until smooth.
  • Set aside 2 tablespoons to brush on the chicken; reserve the rest for the salad.

2. Cook the Chicken

  • Season chicken breasts with salt, pepper, garlic powder, and paprika.
  • Heat olive oil in a skillet over medium heat.
  • Cook chicken for 5–7 minutes per side, or until golden and cooked through (165°F internal temp).
  • Brush with reserved honey mustard during the last minute.
  • Let rest 5 minutes, then slice.

3. Assemble the Salad

  • In a large bowl or platter, combine greens, tomatoes, onion, carrots, and avocado.
  • Top with sliced chicken and nuts/cheese, if using.
  • Drizzle with remaining honey mustard dressing.
