- 2 tablespoons honey
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar (or lemon juice)

For the Salad
- 6 cups mixed greens (like romaine, arugula, spinach)
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- ½ red onion, thinly sliced
- ½ cup shredded carrots
- ¼ cup sliced almonds or toasted pecans (optional)
- ¼ cup shredded cheddar or crumbled feta (optional)
Instructions
1. Make the Dressing
- In a bowl or jar, whisk together Dijon mustard, honey, olive oil, vinegar, salt, and pepper until smooth.
- Set aside 2 tablespoons to brush on the chicken; reserve the rest for the salad.
2. Cook the Chicken
- Season chicken breasts with salt, pepper, garlic powder, and paprika.
- Heat olive oil in a skillet over medium heat.
- Cook chicken for 5–7 minutes per side, or until golden and cooked through (165°F internal temp).
- Brush with reserved honey mustard during the last minute.
- Let rest 5 minutes, then slice.
