Chicken Filling

  • 3 cups cooked shredded chicken
  • 1 cup sour cream
  • 1 cup salsa (mild, medium, or spicy)
  • 1 can (10 oz) diced tomatoes with green chiles (drained)
  • 1 small onion, diced
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp pepper

For the Layers

  • 810 small flour or corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 ½ cups shredded Monterey Jack or pepper jack cheese

Optional Toppings

  • Diced tomatoes
  • Chopped cilantro
  • Sliced jalapeños
  • Sour cream
  • Avocado or guacamole

Instructions

1. Prepare the Chicken Mixture

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix shredded chicken, sour cream, salsa, diced tomatoes with chiles, onion, corn, cumin, chili powder, garlic powder, paprika, salt, and pepper.
  3. Stir until fully combined and creamy.

2. Assemble the Casserole

  1. Lightly grease a 9×13 baking dish.
  2. Spread a thin layer of the chicken mixture onto the bottom.
  3. Add a layer of tortillas (cut to fit if needed).
  4. Spoon more chicken mixture over the tortillas.
  5. Sprinkle generously with the cheese blend.
  6. Repeat layers until all ingredients are used, finishing with a cheese layer on top.

3. Bake

  1. Cover with foil and bake 25 minutes.
  2. Remove foil and bake an additional 10–12 minutes until cheese is bubbly and lightly golden.
  3. Let rest 10 minutes before slicing.

4. Serve

  • Add fresh toppings like cilantro, tomatoes, jalapeños, or a dollop of sour cream.

Notes

  • Corn tortillas give a more authentic flavor; flour tortillas give a softer texture.
  • For a creamier casserole, add ½ cup cream cheese to the chicken mixture.
  • Replace chicken with turkey or shredded rotisserie chicken for convenience.
