For the Meatballs
- 1 lb ground chicken
- ¼ cup breadcrumbs
- 1 egg
- 3 cloves garlic, minced
- Zest of 1 lemon
- 2 tbsp chopped fresh parsley
- ½ tsp salt
- ½ tsp black pepper
- 1 tbsp olive oil (for cooking)
For the Caper Sauce
- 2 tbsp unsalted butter
- 2 cloves garlic, minced
- 1 cup chicken broth
- 2 tbsp fresh lemon juice
- 2 tbsp capers, drained
- ¼ cup heavy cream
- Salt and pepper to taste
Instructions
Make the Meatballs
- In a bowl, combine ground chicken, breadcrumbs, egg, garlic, lemon zest, parsley, salt, and pepper
- Mix gently until combined
- Form into 1-inch meatballs
Cook
- Heat olive oil in skillet over medium heat
- Add meatballs and cook 6–8 minutes, turning until browned and cooked through
- Remove and set aside
Prepare Caper Sauce
- In the same skillet, melt butter
- Sauté garlic for 30 seconds
- Add chicken broth and lemon juice
- Stir in capers and simmer 3–4 minutes
- Add cream and cook until slightly thickened
Combine
- Return meatballs to skillet
- Spoon sauce over meatballs
- Simmer 2–3 minutes
