For the Meatballs

  • 1 lb ground chicken
  • ¼ cup breadcrumbs
  • 1 egg
  • 3 cloves garlic, minced
  • Zest of 1 lemon
  • 2 tbsp chopped fresh parsley
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil (for cooking)

For the Caper Sauce

  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 2 tbsp fresh lemon juice
  • 2 tbsp capers, drained
  • ¼ cup heavy cream
  • Salt and pepper to taste

Instructions

Make the Meatballs

  1. In a bowl, combine ground chicken, breadcrumbs, egg, garlic, lemon zest, parsley, salt, and pepper
  2. Mix gently until combined
  3. Form into 1-inch meatballs

Cook

  1. Heat olive oil in skillet over medium heat
  2. Add meatballs and cook 6–8 minutes, turning until browned and cooked through
  3. Remove and set aside

Prepare Caper Sauce

  1. In the same skillet, melt butter
  2. Sauté garlic for 30 seconds
  3. Add chicken broth and lemon juice
  4. Stir in capers and simmer 3–4 minutes
  5. Add cream and cook until slightly thickened

Combine

  1. Return meatballs to skillet
  2. Spoon sauce over meatballs
  3. Simmer 2–3 minutes
