  • 1 small bunch enoki mushrooms, trimmed
  • ½ cup silken tofu, cubed
  • 2 green onions, thinly sliced
  • 1 tbsp ground toasted sesame seeds
  • 1 tsp soy sauce (optional, for deeper flavor)
  • ½ tsp sesame oil (optional, for aroma)

Instructions

  1. Prepare the base
    • In a medium pot, bring dashi or vegetable broth to a gentle simmer over medium heat.
  2. Add tofu and mushrooms
    • Add cubed tofu and enoki mushrooms. Simmer gently for 2–3 minutes until mushrooms soften.
  3. Dissolve miso
    • In a small bowl, ladle out a bit of the hot broth and whisk in the miso paste until smooth.
    • Pour the dissolved miso back into the pot. Stir gently — do not boil after adding miso.
  4. Finish and serve
    • Stir in soy sauce (if using) and remove from heat.
    • Garnish each bowl with sliced green onions and ground sesame seeds.
    • Drizzle a few drops of sesame oil before serving.
