- 4 cups dashi broth (or vegetable broth)
- 3 tbsp white miso paste
- 1 small bunch enoki mushrooms, trimmed
- ½ cup silken tofu, cubed
- 2 green onions, thinly sliced
- 1 tbsp ground toasted sesame seeds
- 1 tsp soy sauce (optional, for deeper flavor)
- ½ tsp sesame oil (optional, for aroma)
Instructions
- Prepare the base
- In a medium pot, bring dashi or vegetable broth to a gentle simmer over medium heat.
- Add tofu and mushrooms
- Add cubed tofu and enoki mushrooms. Simmer gently for 2–3 minutes until mushrooms soften.
- Dissolve miso
- In a small bowl, ladle out a bit of the hot broth and whisk in the miso paste until smooth.
- Pour the dissolved miso back into the pot. Stir gently — do not boil after adding miso.
- Finish and serve
- Stir in soy sauce (if using) and remove from heat.
- Garnish each bowl with sliced green onions and ground sesame seeds.
- Drizzle a few drops of sesame oil before serving.
