  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 6 cups chicken broth
  • 1 ½ cups orzo pasta
  • 2 cups fresh spinach (or kale)
  • 1 tsp Italian seasoning
  • ½ tsp crushed red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • Freshly grated Parmesan cheese, for serving
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the Sausage:
    In a large soup pot, heat olive oil over medium heat. Add sausage and cook until browned, breaking it into crumbles.
  • Add Vegetables:
    Stir in onion, carrots, and celery. Cook for 5 minutes until softened. Add garlic and cook for 1 minute.
  • Build the Soup Base:
    Stir in diced tomatoes, chicken broth, Italian seasoning, and red pepper flakes. Bring to a boil.
  • Cook the Orzo:
    Add orzo pasta and reduce heat to medium. Simmer for 10 minutes, stirring occasionally, until orzo is tender.
  • Add Greens:
    Stir in spinach (or kale) and cook until wilted. Adjust seasoning with salt and pepper.
  • Serve:
    Ladle into bowls, top with Parmesan cheese and parsley. Serve warm with crusty bread.
