For the Pancakes

- 2 tbsp melted butter (plus more for cooking)
- 1 tsp vanilla extract
For the Caramel Apple Compote
- 2 medium apples, peeled, cored, and sliced
- 2 tbsp butter
- 2 tbsp brown sugar
- ½ tsp cinnamon
- ¼ tsp nutmeg
- 1 tbsp lemon juice
- Pinch of salt
- ¼ cup caramel sauce (store-bought or homemade)
Instructions
1. Make the Caramel Apple Compote
- In a skillet over medium heat, melt butter.
- Add apple slices, brown sugar, cinnamon, nutmeg, lemon juice, and salt.
- Cook for 8–10 minutes, stirring occasionally until apples are tender and caramelized.
- Drizzle in caramel sauce and stir to coat. Keep warm.
2. Prepare the Pancake Batter
- In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk buttermilk, egg, butter, and vanilla.
- Pour wet ingredients into dry and stir until just combined (a few lumps are fine).
3. Cook the Pancakes
- Heat a nonstick skillet or griddle over medium heat and lightly grease it with butter.
- Pour ¼ cup of batter per pancake and cook until bubbles form on the surface.
- Flip and cook another 1–2 minutes until golden.
- Repeat with the remaining batter.
4. Assemble and Serve
