For the Cake:
- 3 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- ½ cup packed light brown sugar
- 5 large eggs
- 1 tbsp vanilla extract
- ½ cup sour cream
- ½ cup whole milk
- 1½ cups diced canned peaches (drained and patted dry) or fresh peeled peaches
- 1 tsp ground cinnamon
- 1 tbsp flour (to toss with peaches)
For the Cinnamon Sugar Swirl:
- ⅓ cup brown sugar
- 1 tsp ground cinnamon
For the Glaze:
- 1 cup powdered sugar
- 2–3 tbsp milk or cream
- ½ tsp vanilla extract
Instructions
1. Preheat & Prep Pan
- Preheat oven to 325°F (163°C).
- Grease and flour a 10–12 cup bundt pan generously.
2. Mix the Dry Ingredients
- In a bowl, whisk together flour, baking powder, and salt. Set aside.
3. Cream Butter & Sugars
- In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy (about 3–5 minutes).
4. Add Wet Ingredients
- Beat in eggs one at a time, then stir in vanilla extract, sour cream, and milk until combined.
5. Combine with Dry
- Gradually add dry ingredients to the wet mixture and mix until just combined (do not overmix).
6. Prepare the Peaches
- Toss diced peaches with 1 tbsp flour and 1 tsp cinnamon.
7. Layer the Batter
- Pour half the batter into the prepared bundt pan.
- Sprinkle cinnamon-sugar swirl over batter.
- Evenly distribute peach mixture.
- Top with remaining cake batter and smooth the top.
8. Bake
- Bake for 75–85 minutes, or until a toothpick inserted comes out clean.
- Cool in pan for 15–20 minutes, then invert onto a wire rack to cool completely.
9. Glaze the Cake
- Whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over cooled cake.
