For the Cake:

  • 3 cups all-purpose flour

  • ½ cup sour cream
  • ½ cup whole milk
  • 1½ cups diced canned peaches (drained and patted dry) or fresh peeled peaches
  • 1 tsp ground cinnamon
  • 1 tbsp flour (to toss with peaches)

For the Cinnamon Sugar Swirl:

  • ⅓ cup brown sugar
  • 1 tsp ground cinnamon

For the Glaze:

  • 1 cup powdered sugar
  • 23 tbsp milk or cream
  • ½ tsp vanilla extract

Instructions

1. Preheat & Prep Pan

  • Preheat oven to 325°F (163°C).
  • Grease and flour a 10–12 cup bundt pan generously.

2. Mix the Dry Ingredients

  • In a bowl, whisk together flour, baking powder, and salt. Set aside.

3. Cream Butter & Sugars

  • In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy (about 3–5 minutes).

4. Add Wet Ingredients

  • Beat in eggs one at a time, then stir in vanilla extract, sour cream, and milk until combined.

5. Combine with Dry

  • Gradually add dry ingredients to the wet mixture and mix until just combined (do not overmix).

6. Prepare the Peaches

  • Toss diced peaches with 1 tbsp flour and 1 tsp cinnamon.

7. Layer the Batter

  • Pour half the batter into the prepared bundt pan.
  • Sprinkle cinnamon-sugar swirl over batter.
  • Evenly distribute peach mixture.
  • Top with remaining cake batter and smooth the top.

8. Bake

  • Bake for 75–85 minutes, or until a toothpick inserted comes out clean.
  • Cool in pan for 15–20 minutes, then invert onto a wire rack to cool completely.

9. Glaze the Cake

  • Whisk together powdered sugar, milk, and vanilla until smooth. Drizzle over cooled cake.
