  • 1 cup shelled pistachios (unsalted)
  • ½ cup panko breadcrumbs
  • ¼ cup grated Parmesan cheese (optional)
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon lemon zest
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons Dijon mustard (or Greek yogurt)
  • 1 egg (lightly beaten, optional)
  • Salt and black pepper to taste
  • Lemon wedges, for serving

Instructions

1. Preheat and Prepare

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper or place a wire rack over it.

2. Prepare the Pistachio Crust

  • In a food processor, combine pistachios, panko breadcrumbs, Parmesan cheese, parsley, lemon zest, and minced garlic.
  • Pulse until the mixture resembles coarse crumbs.
  • Drizzle in olive oil and pulse again until the mixture holds together when pressed.

3. Prepare the Cod Fillets

  • Pat the cod fillets dry with paper towels.
  • Season both sides with salt and black pepper.
  • Brush the top of each fillet with Dijon mustard or Greek yogurt.
  • If using, dip each fillet into the beaten egg, allowing any excess to drip off.

4. Apply the Pistachio Crust

  • Press the pistachio mixture onto the top of each fillet, ensuring an even coating.
