- 1 cup shelled pistachios (unsalted)
- ½ cup panko breadcrumbs
- ¼ cup grated Parmesan cheese (optional)
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon lemon zest
- 1 clove garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons Dijon mustard (or Greek yogurt)
- 1 egg (lightly beaten, optional)
- Salt and black pepper to taste
- Lemon wedges, for serving
Instructions
1. Preheat and Prepare
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper or place a wire rack over it.
2. Prepare the Pistachio Crust
- In a food processor, combine pistachios, panko breadcrumbs, Parmesan cheese, parsley, lemon zest, and minced garlic.
- Pulse until the mixture resembles coarse crumbs.
- Drizzle in olive oil and pulse again until the mixture holds together when pressed.
3. Prepare the Cod Fillets
- Pat the cod fillets dry with paper towels.
- Season both sides with salt and black pepper.
- Brush the top of each fillet with Dijon mustard or Greek yogurt.
- If using, dip each fillet into the beaten egg, allowing any excess to drip off.
4. Apply the Pistachio Crust
- Press the pistachio mixture onto the top of each fillet, ensuring an even coating.
5. Baking
- Place the crusted fillets on the prepared baking sheet.
