- 4 medium beets (red or golden, or both for contrast)
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 4 oz blue cheese (crumbled or sliced)
- ¼ cup chopped toasted walnuts or pecans
- 2 tablespoons fresh chives or parsley, finely chopped
- 1–2 teaspoons balsamic glaze or reduction (for garnish)
Optional Additions
- Arugula or microgreens (for serving base)
- Thin pear or apple slices (layered between beets)
- Honey drizzle (for added sweetness)
Instructions
1. Roast the Beets
- Preheat oven to 400°F (200°C).
- Wash and trim beets. Wrap each in foil and place on a baking sheet.
- Roast for 40–50 minutes or until fork-tender.
- Let cool slightly, then peel and slice into ¼–½-inch rounds.
2. Build the Towers
- Layer beet slices with crumbled or thinly sliced blue cheese in between.
- For each tower, use 3–4 beet slices and 2–3 layers of cheese.
- Top with more cheese, chopped toasted nuts, and herbs.
3. Garnish & Serve
- Drizzle with balsamic glaze and season with salt and pepper.
- Serve over a bed of arugula or microgreens if desired.
