- 1 ½ lbs baby potatoes (halved or quartered)
- 12 oz fresh or frozen green beans (trimmed)
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp Italian seasoning
- Salt and black pepper to taste
- Optional: shredded cheddar or Parmesan for topping
- Optional: fresh parsley, for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Prepare ingredients:
- If using fresh green beans, blanch them in boiling water for 3–4 minutes, then drain.
- Toss potatoes with olive oil and seasonings.
- Assemble the casserole:
- In a large bowl, mix sausage slices, seasoned potatoes, and green beans.
- Spread the mixture evenly in a greased 9×13 baking dish.
- Bake uncovered for 45–50 minutes, stirring once halfway through, until the potatoes are tender and golden.
- Optional: Sprinkle cheese on top and broil for 2–3 minutes until melted and bubbly.
- Garnish and serve with chopped parsley or an extra dash of pepper.
