  • 810 slices of rye bread, cut into cubes
  • 2 tbsp unsalted butter, melted
  • 1 tsp garlic powder (optional)
  • 1 tsp caraway seeds (optional, for extra flavor)
  • Salt and pepper, to taste

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish or casserole dish with cooking spray or butter.
  2. Prepare the Rye Bread Cubes:
    • Cut the rye bread into cubes. In a bowl, toss the bread cubes with melted butter, garlic powder, and caraway seeds (if using). This adds flavor to the bread cubes and makes them crispy during baking.
  3. Assemble the Reuben Bake:
    • Layer the bottom of the prepared baking dish with half of the buttered rye bread cubes.
    • Top with a layer of corned beef slices, followed by a layer of sauerkraut.
    • Spread half of the Swiss cheese over the sauerkraut.
    • Drizzle half of the Russian dressing (or Thousand Island dressing) over the cheese.
  4. Repeat the Layers:
    • Add another layer of the remaining rye bread cubes, followed by the remaining corned beef, sauerkraut, Swiss cheese, and dressing.
  5. Bake the Reuben:
    • Cover the dish with aluminum foil and bake for 25-30 minutes, or until the cheese is melted and bubbly.
    • After 30 minutes, remove the foil and bake for an additional 5-10 minutes to allow the top to become golden and slightly crispy.
  6. Serve:
