- 1 lb corned beef, thinly sliced (or leftover corned beef from St. Patrick’s Day)
- 2 cups Swiss cheese, shredded
- 1 1/2 cups sauerkraut, drained and squeezed dry
- 1/2 cup Russian dressing (or Thousand Island dressing, if preferred)
- 8–10 slices of rye bread, cut into cubes
- 2 tbsp unsalted butter, melted
- 1 tsp garlic powder (optional)
- 1 tsp caraway seeds (optional, for extra flavor)
- Salt and pepper, to taste
Instructions
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish or casserole dish with cooking spray or butter.
- Prepare the Rye Bread Cubes:
- Cut the rye bread into cubes. In a bowl, toss the bread cubes with melted butter, garlic powder, and caraway seeds (if using). This adds flavor to the bread cubes and makes them crispy during baking.
- Assemble the Reuben Bake:
- Layer the bottom of the prepared baking dish with half of the buttered rye bread cubes.
- Top with a layer of corned beef slices, followed by a layer of sauerkraut.
- Spread half of the Swiss cheese over the sauerkraut.
- Drizzle half of the Russian dressing (or Thousand Island dressing) over the cheese.
- Repeat the Layers:
- Add another layer of the remaining rye bread cubes, followed by the remaining corned beef, sauerkraut, Swiss cheese, and dressing.
- Bake the Reuben:
- Cover the dish with aluminum foil and bake for 25-30 minutes, or until the cheese is melted and bubbly.
- After 30 minutes, remove the foil and bake for an additional 5-10 minutes to allow the top to become golden and slightly crispy.
- Serve:
- Let the Reuben cool for a few minutes before slicing.
- Serve with extra Russian or Thousand Island dressing on the side for dipping.
