- 2 tsp dried thyme (or 1 tbsp fresh)
- 1 cup beef stock
- ½ cup balsamic vinegar
- 2 tbsp brown sugar
Instructions
1. Sear the Brisket
- Pat the brisket dry with paper towels.
- Season generously with salt and pepper.
- Heat oil in a heavy skillet over medium-high heat.
- Sear brisket on all sides (about 3–4 minutes per side) until browned. Set aside.
2. Caramelize the Onions
- In the same skillet, add sliced onions. Cook over medium heat for 15–20 minutes, stirring occasionally, until golden brown and soft.
- Add garlic and tomato paste. Cook 1–2 minutes.
- Pour in balsamic vinegar, scraping up any browned bits.
- Add brown sugar and stir until glossy.
3. Prepare the Slow Cooker
- Transfer the onion mixture to the slow cooker.
- Place brisket on top.
- Add beef stock, thyme, and any optional extras.
- Cover and cook:
- Low: 8–10 hours
- High: 4–6 hours
4. Rest and Slice
- Remove brisket from the cooker and rest for 15 minutes.
