Description

These Spinach and Feta Chicken Rolls are juicy chicken breasts filled with a garlicky sautéed spinach and crumbled feta mixture, rolled up and baked until golden and tender. They’re simple to prepare, visually stunning, and packed with Mediterranean flavor.


Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 4 cups fresh spinach (or 1 cup frozen, thawed and drained)
  • ½ cup crumbled feta cheese
  • ½ teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional)
  • Toothpicks or kitchen twine (to secure rolls)

Optional Topping or Sauce

  • ¼ cup grated Parmesan cheese
  • Drizzle of lemon juice or a light cream sauce

Instructions

1. Prep the Chicken

  • Butterfly each chicken breast by slicing horizontally, then pound to ¼-inch thickness between parchment or plastic wrap.
  • Season both sides with salt and pepper.

2. Prepare the Filling

  • Heat olive oil in a skillet over medium heat.
  • Add garlic and cook until fragrant (30 seconds), then add spinach.
  • Sauté until wilted and moisture is evaporated. Let cool slightly.
  • Stir in feta cheese, oregano, and red pepper flakes.

3. Stuff and Roll

  • Spread a spoonful of the spinach-feta filling over each chicken breast.
  • Roll tightly from one end to the other.
  • Secure with toothpicks or tie with kitchen twine.

4. Bake

  • Preheat oven to 375°F (190°C).
  • Place rolls seam-side down in a baking dish.
  • Bake for 30–35 minutes, or until chicken is cooked through (internal temp 165°F / 74°C).
  • Optional: Broil for 2 minutes at the end for extra browning.

5. Serve

  • Let rest 5 minutes. Slice and drizzle with lemon juice or your favorite light sauce.
