For the Meatloaf
- 1 cup milk
- 6 slices of white bread, torn into small pieces
- 2 lbs ground beef (80/20 or lean)
- 1 cup grated Parmesan cheese
- ¼ tsp seasoned salt
- ¾ tsp salt
- Freshly ground black pepper, to taste
- ¼ cup finely chopped fresh parsley
- 4 large eggs, beaten
- 1 medium onion, finely diced
For the Glaze
- 1½ cups ketchup
- ⅓ cup brown sugar
- 1 tsp dry mustard
- A few dashes of hot sauce (optional)
- A few dashes of Worcestershire sauce
Instructions
1. Preheat & Prep
- Preheat oven to 350°F (175°C).
- Line a baking sheet with foil and lightly grease or use a broiler pan.
2. Soak the Bread
- In a large bowl, pour the milk over the torn bread. Let it sit for 5 minutes until soaked and mushy.
3. Make the Meat Mixture
- Add ground beef, Parmesan, seasoned salt, salt, pepper, parsley, eggs, and diced onion to the bread mixture.
- Mix gently by hand until well combined, but do not overwork.
4. Shape the Loaf
- Transfer the mixture to the prepared pan and shape it into a loaf about 10 inches long and 5 inches wide.
5. Prepare the Glaze
- In a small bowl, whisk together ketchup, brown sugar, dry mustard, Worcestershire, and hot sauce if using.
- Pour half the glaze over the top of the meatloaf and spread evenly.
6. Bake
- Bake uncovered for 45 minutes.
- Remove from oven, pour on remaining glaze, and return to oven for an additional 20–25 minutes, until cooked through (internal temp should reach 160°F/71°C).
- Let rest for 10 minutes before slicing.
