For the Masa Dough
- 2 cups masa harina
- 1 ½ – 2 cups vegetable broth (warm)
- ½ cup vegetable oil (or melted coconut oil)
- 1 teaspoon baking powder
- 1 teaspoon salt
For the Jackfruit Filling
- 2 cups young green jackfruit (canned, drained and shredded)
- 2 tablespoons vegetable oil
- 1 small onion (finely chopped)
- 3 cloves garlic (minced)
- 1 cup tomato sauce or crushed tomatoes
- 2–3 tablespoons red chili sauce or salsa verde
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
1️⃣ Prepare the Filling
- Heat olive oil in a skillet over medium heat.
- Add onion and cook until soft.
- Stir in garlic and cook for 1 minute.
- Add shredded jackfruit, cumin, paprika, and chili powder.
- Pour in tomato sauce and broth.
- Simmer for 10–12 minutes until tender and flavorful.
2️⃣ Make the Masa Dough
- In a bowl, mix masa harina, baking powder, and salt.
- Add vegetable oil and broth gradually.
- Mix until a soft, spreadable dough forms.
3️⃣ Assemble the Tamales
- Spread 2–3 tablespoons of masa onto each corn husk.
- Add a spoonful of jackfruit filling in the center.
- Fold sides inward, then fold the bottom up to seal.
4️⃣ Steam the Tamales
- Arrange tamales upright in a steamer.
- Steam for 60–75 minutes until the masa is firm.
5️⃣ Serve
Let cool slightly, then serve warm with salsa or vegan crema.
