Ingredients
For the Salad:
- 2 ripe but firm pears (Bosc or Anjou work best)
- ½ cup crumbled blue cheese
- ¼ cup toasted walnuts or pecans, chopped
- 2 tbsp dried cranberries or pomegranate seeds (optional)
- 4 cups mixed greens (arugula, spinach, or spring mix) For the Dressing:
- 3 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar (or honey for a sweeter touch)
- 1 tsp Dijon mustard
- 1 tsp honey (optional)
- Salt & black pepper to taste
Instructions
Step 1: Prep the Pears
Slice the pears horizontally into 4-5 even rounds.
Carefully remove the seeds from each slice using a small knife or spoon.
Keep the slices stacked to maintain their original pear shape.
Step 2: Assemble the Stacks
On each serving plate, place a small handful of mixed greens as a base.
Start layering the pear slices back together, placing crumbled blue cheese and nuts between each layer.
Secure the stack with a toothpick or skewer if needed to keep it stable.
Step 3: Make the Dressing
In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey (if using), salt, and black pepper.
Step 4: Finish & Serve
Drizzle the dressing over the pear stacks and greens.
Sprinkle with dried cranberries or pomegranate seeds for a pop of color and sweetness.
Serve immediately and enjoy this beautiful and delicious salad!
Notes
✔️ Use goat cheese instead of blue cheese for a milder flavor.
✔️ Swap walnuts for candied pecans for extra crunch.
✔️ Add prosciutto or crispy bacon for a savory twist.
