  • ¼ cup heavy cream
  • 2 tbsp unsalted butter
  • ¼ cup fresh raspberries (mashed and strained for puree)
  • ½ tsp vanilla extract
  • ½ cup powdered sugar or shredded coconut (for coating)

Instructions

  1. Make raspberry puree
    • Mash raspberries and press through a fine sieve to remove seeds. Set aside.
  2. Heat cream and butter
    • In a small saucepan, heat heavy cream and butter until just simmering.
  3. Melt chocolate
    • Pour the hot cream mixture over chopped white chocolate. Let sit for 2 minutes, then stir until smooth.
  4. Add raspberry flavor
    • Stir in raspberry puree and vanilla extract until well combined. Cover and refrigerate for at least 2 hours, or until firm.
  5. Shape truffles
    • Scoop chilled mixture into small balls using a spoon or melon baller. Roll quickly between your palms to smooth.
