- 8 oz white chocolate, finely chopped
- ¼ cup heavy cream
- 2 tbsp unsalted butter
- ¼ cup fresh raspberries (mashed and strained for puree)
- ½ tsp vanilla extract
- ½ cup powdered sugar or shredded coconut (for coating)
Instructions
- Make raspberry puree
- Mash raspberries and press through a fine sieve to remove seeds. Set aside.
- Heat cream and butter
- In a small saucepan, heat heavy cream and butter until just simmering.
- Melt chocolate
- Pour the hot cream mixture over chopped white chocolate. Let sit for 2 minutes, then stir until smooth.
- Add raspberry flavor
- Stir in raspberry puree and vanilla extract until well combined. Cover and refrigerate for at least 2 hours, or until firm.
- Shape truffles
- Scoop chilled mixture into small balls using a spoon or melon baller. Roll quickly between your palms to smooth.
- Coat and serve
- Roll each truffle in powdered sugar or shredded coconut. Keep chilled until ready to serve.
