For the Salad
- 1 lb large shrimp, peeled and deveined
- 1 tbsp olive oil
- ½ tsp paprika
- ½ tsp garlic powder
- Salt and black pepper, to taste
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- ½ small red onion, thinly sliced
- 1 cup mixed greens or arugula
- ¼ cup fresh cilantro, chopped
For the Zesty Dressing
- 3 tbsp olive oil
- 2 tbsp fresh lime juice
- 1 tsp lime zest
- 1 tsp honey
- ½ tsp Dijon mustard
- Salt and black pepper, to taste
Instructions
1. Cook the Shrimp
- Toss shrimp with olive oil, paprika, garlic powder, salt, and pepper.
- Heat a skillet over medium-high heat.
- Cook shrimp 2–3 minutes per side until pink and opaque.
- Remove from heat and let cool slightly.
2. Make the Dressing
- In a small bowl, whisk together olive oil, lime juice, lime zest, honey, Dijon, salt, and pepper until smooth.
3. Assemble the Salad
- In a large bowl, combine greens, tomatoes, red onion, avocado, and cilantro.
- Add cooked shrimp on top.
4. Toss & Serve
- Drizzle with dressing and gently toss.
- Serve immediately.
