Description

This Zesty Shrimp & Avocado Salad is fresh, vibrant, and bursting with citrusy flavor. Juicy shrimp are paired with creamy avocado, crisp vegetables, and a bright lime dressing that brings everything together.


Ingredients

For the Salad

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • ½ tsp paprika
  • ½ tsp garlic powder
  • Salt and black pepper, to taste
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • ½ small red onion, thinly sliced
  • 1 cup mixed greens or arugula
  • ¼ cup fresh cilantro, chopped

For the Zesty Dressing

  • 3 tbsp olive oil
  • 2 tbsp fresh lime juice
  • 1 tsp lime zest
  • 1 tsp honey
  • ½ tsp Dijon mustard
  • Salt and black pepper, to taste

Instructions

1. Cook the Shrimp

  1. Toss shrimp with olive oil, paprika, garlic powder, salt, and pepper.
  2. Heat a skillet over medium-high heat.
  3. Cook shrimp 2–3 minutes per side until pink and opaque.
  4. Remove from heat and let cool slightly.

2. Make the Dressing

  • In a small bowl, whisk together olive oil, lime juice, lime zest, honey, Dijon, salt, and pepper until smooth.

3. Assemble the Salad

  1. In a large bowl, combine greens, tomatoes, red onion, avocado, and cilantro.
  2. Add cooked shrimp on top.

4. Toss & Serve

  • Drizzle with dressing and gently toss.
  • Serve immediately.

  • Use freshly cooked or grilled shrimp for best flavor.
