For the Taco Shells
- 6–8 small flour tortillas
- 3 tablespoons melted butter
- 1 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 1 teaspoon cinnamon (optional, for extra flavor)
For the Cheesecake Filling
- 225 g (8 oz) cream cheese (softened)
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup whipped topping (or whipped cream)
For the Cherry Topping
- 1 can (about 540 g / 21 oz) cherry pie filling
Instructions
1️⃣ Make the Taco Shells
- Preheat oven to 375°F (190°C).
- Brush tortillas with melted butter.
- Coat both sides lightly with cinnamon sugar.
- Fold over oven rack bars or taco molds.
- Bake for 8–10 minutes until crisp. Cool completely.
2️⃣ Prepare the Filling
- Beat cream cheese until smooth.
- Add powdered sugar and vanilla.
- Fold in whipped topping until light and creamy.
3️⃣ Assemble
- Spoon or pipe cheesecake filling into cooled taco shells.
- Top with cherry pie filling.
4️⃣ Garnish
Add crushed graham crackers or whipped cream if desired.
5️⃣ Serve
Serve immediately for best crunch.
