Description

Crunchy Apple Carrot Salad is a crisp, colorful side dish made with fresh apples, grated carrots, crunchy pecans, dried cranberries, and a creamy homemade dressing. Ready in just minutes, this easy no-cook recipe is perfect for family dinners, potlucks, picnics

Ingredients

Scale

For the Salad

  • 2 large Honeycrisp or Fuji apples, cored and cut into thin matchsticks or bite-sized pieces
  • 4 medium carrots, peeled and freshly grated (about 4 cups)
  • 2 celery stalks, thinly sliced
  • ⅓ cup dried cranberries
  • ¼ cup raisins (optional)
  • ½ cup chopped pecans, toasted
  • 2 tablespoons chopped fresh parsley
  • 2 green onions, thinly sliced (optional)

For the Creamy Dressing

  • ½ cup mayonnaise
  • ¼ cup plain Greek yogurt (optional)
  • 2 tablespoons honey
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  • In a large bowl, combine the apples, grated carrots, dried cranberries, walnuts, parsley, and sunflower seeds, if using.
  • In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, cinnamon, salt, and pepper until well combined.
  • Pour the dressing over the salad and toss gently until everything is evenly coated.
  • Refrigerate for 10–15 minutes to allow the flavours to meld, or serve immediately.
  • Garnish with extra nuts, seeds, or fresh herbs before serving.

Notes

  • Toss the apples with a little lemon juice before mixing to help prevent browning.
  • Toast the walnuts or pecans for a richer, nuttier flavour.
  • This salad is best enjoyed the day it’s made, though leftovers will keep in an airtight container in the refrigerator for up to 2 days.
